So, I have some leftover steamed red potatoes…

…not enough for a proper mash; but I also have a whole chicken for roasting.  I know that some of the people reading this can cook: does anybody have a good recipe for a potato-based stuffing?  Is there even such a thing?

  1. I would brown potatoes crispy to go with chicken, not stuff the bird with them. How ’bout quatering them, mixing with stuffing stlye spices* and some olive oil and roasting them for 30 minutes or so on say 350.

    *sage, thyme, that kind of thing.
