Caramelized Onion Bacon Tarts!

Behold!

The recipe here needs some editing, though. The onions will only caramelize if you put them in a slow cooker and slow-cook them; “45-50 minutes at medium-low heat” are LIES YOUR FILTHY LIES MAKE YOUR MOTHER WEEP IN SHAME, RECIPE. Also: check after 8 minutes, not 18. But they still came out well! They don’t look like the tarts in the original picture, but nothing I make ever does. As long as it tastes all right, that’s fine with me.

PS: My wife argues that what I got was arguably more onion jam than anything else. I concede this. But we also agree that onion jam is a great thing to turn an onion into; so who cares, really?

  3. My childhood was blighted by constant exposure to Campbell cream of mushroom soup, and Knorr onion soup mix, so I can only look on in horror.
