[COMPLETELY DIFFERENT UPDATE]: Welcome, Instapundit readers. I should have done this last week, when I was having a pledge drive and everything.
Maple-roasted bacon. I have all the ingredients.
(H/T: Instapundit).
UPDATE: Bacon.
[UPDATE 2]: Crap. The actual maple syrup is a diet monstrosity bought for my father-in-law, who has dietary requirements. The regular syrup has no maple in it. To the Internet!
[UPDATE 3]: Honey + Brown Sugar = WINNING!
[UPDATE 4]: The bacon has launched. I repeat: the bacon has launched.
[UPDATE 5]: Halfway on the cooking. Meanwhile:
Winning!
Cheating!
Mixing!
[UPDATE 6]: Well, that was almost a disaster. I’m not cooking a full pound, so ten minutes is plenty for cooking the bacon. Caught it just in time; now glazing.
[UPDATE 7]: Captain. There be candied bacon here:
[UPDATE 8]: …and it’s now on a cooling rack to, well, cool.
[UPDATE LAST]: Oh, that’s some good stuff. But I gotta use real maple syrup next time for the full effect.
You know what would make that even better? If you wrap the bacon in Pizza Rolls!
Did this last year while camping. Lotta whiskey involved prior to and during cooking, but, from what I can remember, it was awesome.
Class B maple syrup of course?
A quick way to candy bacon is to fry it up as normal and then just sprinkle with brown sugar right at the end.
Although, I may just have to try the maple variety very soon.
Heartbreak Ridge – absolutely. Once you know real maple syrup, you you move to the darker grades quickly.
I’ve been cooking this for years, just with brown sugar and a touch of cayenne for some “kick.” It’s called pig candy.
I think next time we’re going to go with either real maple syrup, or just brown sugar and a little water.
I know what i’m cooking this weekend! Yum!
I had really delicious thick sliced bacon pulled out of the freezer last night, and real Vermont maple syrup, and upon following the Instapundit link, I thought of trying it out this morning.
Then I remembered I hate maple syrup – and made a real tasty BLT instead.
DO NOT forget the pepper! http://www.marthastewart.com/node/319491
Moe,
Breda at Breda’s Fallacy had this version called Pig Candy.

Basically, dredge it in brown sugar, cumin, ginger, nutmeg, some pepper to taste, etc. (My recipie, not hers.) Bake it at 350 till done.
She improved it here with brown sugar cinnamon pig candy topped with nuts and added to vanilla ice cream

Have fun eating it. Let Instapundit know about the other versions.
