Fresh Strawberry Pie!

This Strawberry Pie recipe surprised my wife in that it doesn’t exactly bake.  Oh, the pie crust is baked.  And the glooped strawberries and sugar is first boiled, then simmered.  But this pie takes its final form while chilling in the fridge.

I think that it came out rather well, all things considered. If I make it again I’ll lay down strawberries, then the glop, then more strawberries.  But it should all firm up in the chill.  The gloop certainly tasted fine, so it’s going to be very hard of me to muck this all up, in the end.  We’ll see at dinner time.

PS: The recipe also wanted me to hand-whip the cream.  As my dear, departed father used to say: it’s good to want.

    Pro-Tip: Get Smores Pop-Tarts. Put them in the freezer. Take them out and eat them cold. Chill. You’re welcome.
